Curry Parsnip Salad

Yield 4 servings

Ingredients
2 parsnips, roughly chopped
3 tablespoons avocado oil
2 tablespoons maple syrup
1½ tablespoons curry powder
Handful of dried cranberries
Handful raw cashews, no salt added
1 green onions, minced
2 celery stalks, minced
2 cups baby spinach or mixed greens per serving
Generous pinch sea salt and pepper

Directions
Place parsnips in a food processor, pulsate until the consistency of rice. Combine parsnip rice and all other ingredients, except spinach or mixed greens, in a large bowl; mix well. Place your favorite bed of greens onto a plate and top with parsnip dressing.
