Chimichurri Chickpea & Avocado Sandwich

Chimichurri Chickpea & Avocado Sandwich

Ingredients
1 can chickpeas, drain, rinse
½ large avocado
½ small red onion, roughly chopped
½ cup parsley, minced *
4 small garlic cloves
2 teaspoons red wine vinegar
1 red chili pepper, minced
1 teaspoons oregano
1/2 teaspoon sea salt
pepper to taste

Directions
Add garlic and red onion into your food processor, pulsate until minced, add chickpeas, avocado and the rest of the ingredients, process until desired consistency.  Spoon over rustic sourdough with your favorite spring mix or greens and sandwich fix’ns.
Garnish Ideas: Vegenaise, tomato, sliced red or green onion, dash of cayenne.

*Replace the parsley with cilantro and 2 teaspoons lime juice for a new twist.
