Best Raw Vegan Coconut Key Lime Pie!

Hi there! Ready for an all Raw, all Vegan Coconut Key Lime Pie; enjoy the dark, chocolatey and fluffy crust; extremely addicting sweetened coconut cream infused with tart key lime!

Ingredients
1 cup coconut cream*
1/8th cup key lime, juiced – approx. 3 key limes
1 teaspoon alcohol free vanilla extract
2 tablespoons agave plus 1 teaspoon agave
½ cup pecans
7 dates, pitted and diced
1 teaspoon cacao powder
Garnish:  1 teaspoon lime zest

Directions
Let’s start with the crust.  Place pecans in a small food processor; pulsate nuts until small and crumbly.  Toss in diced dates; pulsate until the mixture sticks together and dates are thoroughly mixed.  Sprinkle cacao powder and drizzle 1 teaspoon agave; pulsate until the mixture is dark, chocolatey and fluffy.   Do not over process; that can cause the crust to become too buttery.
Divide the mixture and gently press into the bottom of two small glasses or two 4 ounce canning jars; cover and refrigerate while making the key lime filling.
Now for the coconut key lime pie filling.  Blend 1 cup coconut cream, lime juice, vanilla, and 2 tablespoon agave in a large mixing bowl with an “electric mixer” until light and fluffy.  A fork or handheld blender can be used, but the consistency and taste will not compare.

Gently spoon and divide the coconut key lime pie filling in small glasses over the crust; top with lime zest and refrigerate for at least two hours or freeze for one hour.   Remove from the fridge, get two little spoons and make sure you share this all raw vegan goodness!

Garnish ideas:  sprinkle coconut sugar or macaroon coconut flakes

*1 can organic coconut milk where the only ingredients are coconut, water and guar gum.  Each can contains approximately one cup coconut cream.   Keep the can in the coldest part of the refrigerator until use.  Do not shake can or the cream and liquid will emulsify.  We want to keep it separated.  After opening, carefully scoop the cream from the top of the can and reserve the liquid for smoothies.
